Peanut Butter Cookies

I found an incredibly easy recipe in a book at the library yesterday and we had to try it. It has only 3 ingredient, an egg, a cup of sugar, and a cup of peanut butter. You mix all the ingredients, roll out little balls, put them on a greased cookie sheet, and bake at 350 for 10 - 12 minutes. Then you squish them with a fork when they're cooked. Peyton and Liam love to help in the kitchen so they donned their aprons and rolled some peanut butter balls. Liam kept asking if he could, "have a taste" of the batter. I'm not a huge fan of peanut butter cookies, but these were easy to make and the kids enjoyed it. I'm hoping to make gingerbread cookies with them soon. We have a load of Christmas cookie cutters to use. I also want to make cake balls and some peppermint meringue kisses too. Lots of Christmas baking to look forward to very soon!
